It sure feels like summer takes forever to arrive. The tease of spring can be overwhelming. But then, one day, before you know it, it’s here, in full force. Life is slower, easier and uplifting, something that is incredibly needed after the year we’ve had. With this joyful season (and vaccinations) comes reunions with friends and family, excursions and adventures, and a welcome break from the daily grind. Summer is truly an amazing time.
Another thing I love about this special season is the desire to eat a little bit healthier. It’s a nice opportunity to re-group and change bad habits we all fall victim to. Fruits and vegetables are at their finest and abundant during this season and everything looks and tastes better. Fresh fruits like sweet, juicy peaches are seductively luring (and I say this as a person who does not love peaches). Let’s face it, in the summer, everything is better.

Peaches And Cream Smoothie
- 1 cup fresh peaches, pitted, skin on, chopped (about 3 small)
- 1 (5.3 oz) container of plain low-fat greek yogurt
- 3/4 cup coconut milk
- 2 teaspoons honey
- 1/4 teaspoon vanilla extract
- 1/4 teaspoon ground cinnamon
- 1 cup ice
- fresh peach slice, for garnish (optional)
- Step 1 Using a kitchen blender add the peaches, yogurt, coconut milk, honey, vanilla, cinnamon and ice. Next, blend on high for 60 seconds until smooth. Serve right away.
